Leftovers to Shepherd's Pie

Shepherd’s pie is one of the most loved meals in Ireland. The dish came about in the early 1800s as a way to put leftovers to good use. The struggle of minimizing food waste was real back then just like today, so I decided to try making my own shepherd's pie.

Using the small bits of raw ingredients I have in the fridge, I started creating the meat base sauteed with garlic, onion, dried tomatoes, and mushrooms.

To elevate the flavor, I simply added a dash of dried basil leaves.

Using the 3 small potatoes I have, I created a mashed potato.

Finally, add the mashed potato to cover the whole pan. Add parmesan cheese for extra love! This can be baked but I skipped because the leftover meat is already cooked.

Shepherd's Pie is loved all over the world. Apparently, the one I made is the American version of shepherd’s pie because I added mushroom and cheese! One of these days I will try to make the Filipino version with Adobo or Pares base!
